I bought the Pearl XS for home after deciding I just had to try sous vide cooking. I first looked into a few sous vide solutions designed for home use and found the "Water Ovens" (no circulation) available for home use were not for me. I got a demo of the most popular home model at my local gourmet store and was seriously underwhelmed. I was disappointed by the poor quality (felt cheap and flimsy) and lack of features and precision for something that cost $450.I decided to go for it and bought a Pearl XS. So far I am very glad I made the investment. First, I ordered the Pearl XS on a Monday and received the unit that same Friday. This was a great surprise since Amazon had predicted 2-3 weeks for delivery. I rushed to open the box (which was 30lbs not the 90lbs it says on Amazon) and was immediately impressed by the solid, high quality construction of the unit (Yay for German Engineering). I will be shocked if this thing doesn't outlive me.
The XS is pretty small (go figure). It takes up less countertop space than my toaster oven (see the customer image I posted). I am single, if I had a family I might spring for a larger model. Of course, the circulator unit is the same on all models and can handle 15.2 gallons so I bought a 13 gallon plastic tub (and the clamp) for large parties and picnics and such. I had a plan to put it in the useless corner space on my counter with the valve emptying directly into the sink. This has worked out great as it is super-easy to empty and fill.
I decided that 63.5 degree eggs would be a good first test (plus I had nothing else in the fridge). The manual has a quick start guide in the beginning and I was up and running in seconds. My tap water is hot so it only took 30 seconds or so to get up to temp. The unit sounds a lot like the aquarium I had as a kid. There is a low hum of the motor and the sound of the water circulating. Because of the powerful circulator and the smallest size tank the eggs flew around like crazy and the shells got cracked, although not to the point of leaking any egg white, so no problem. I will probably try securing the eggs next time. The eggs were perfect. Just amazing. The yolks were perfect gel. I have since made perfect scallops, perfect lobster, and perfect chicken. I bought a whole bird for about $3.00 at Ranch 99 and made the most incredible chicken breasts and chicken legs I've ever had!
An unexpected bonus is that I'm finding cooking to be more enjoyable knowing my protein will come out perfect. I find myself focusing on my sauces and vegetables more since I no longer need to obsess over getting the meat cooked right. Why not roast the chicken bones to make a sauce? Why not make stock from the lobster shells while the meat cooks? If the sauce isn't done reducing when the meat is done, no worries, just leave it in until you're ready. I also didn't consider the reduction in dirty dishes I generate. The food goes from the bag right to the plate.
So far I'm using the Pearl every day. I can't overstate how pleased I am with the results. Obviously the Pearl is a huge investment, but for me, it's been a dream come true!
